What is the difference between curd cheese and cream cheese

Holy cow! Cream cheese is cheap! I love the diversity of it all and how one simple thing like cheese is different in various places. Who would have thought that farmers cheese is dirt cheap in Europe while cream cheese is not.

Over in the States it seems to be the other way around. Also, one reader posted about cottage cheese… is that farmers cheese too, kind of cut into tiny pieces? If it were pressed and aged it would be not unlike a lot of other more conventional cheeses.

Does that make sense? The two are no doubt related. It sounds like the same sort of thing to me! The last two are also somewhat regional, so you sometimes can only find one or the other depending where in you are in the country.

Thank you for the comment. The family is back in Chicago for the holidays and I just had some pierogis last night. Quite a bit drier than the creamy versions. It takes some work to find the right thing. In the s, in Ohio, my Czech grandmother would drain cottage cheese in cheesecloth and use it in kolachkes. It was a bit grainy in texture but delicious. Thank you for the very interesting discussion! Thank you Janet! What a great improvisation.

I was going to comment that the quark in Sweden reminds me of a slightly smoother marscapone!

Hey Chana! As ever, using butter not margarine , free range farm eggs and fresh curd or cream cheese makes a huge difference to the taste. Curiously, some old English cheesecake recipes omitted cheese completely! One example is a lemon cheesecake created in the late 17th century. When it comes to baked cheesecakes, one of the main complaints from cooks is that the top of the filling cracks as it cooks. It still tastes fine, but looks unsightly. If all else fails and it still cracks you can cover the surface with whipped cream or fresh fruit or drizzle with chocolate.

Curd cheese is similar to cream cheese but with a lower fat content and it, like cottage cheese, has had a lactic starter added. This gives it a light acidity and a light flavour, colour and texture. It is sometimes called medium-fat soft cheese. I like it best of all for cheesecakes because it gives them a lighter flavour and texture, as you will discover if you make the Curd Cheesecake with Greek Yoghurt.
